Role Overview

Char Choma is a butchery-style beach restaurant in Mombasa known for authentic Nyama Choma, fresh farm-to-grill meats, and a vibrant oceanfront dining experience. We are seeking a confident and guest-focused Food Service Supervisor to lead food service execution on the floor. The successful candidate will take ownership of the guest dining experience, ensuring every meal is delivered accurately, explained professionally, and followed up with attention to detail. This role requires strong service leadership, operational coordination, and a passion for delivering exceptional hospitality standards.

Key Responsibilities

  • Ensure guests enjoy their meals as intended through proactive engagement and attentive service oversight.
  • Perform table check-backs within 2–4 minutes of food delivery to confirm satisfaction, accuracy, and quality.
  • Confidently explain meat cuts, doneness levels, sauces, accompaniments, and recommended pairings to enhance the dining experience.
  • Handle guest food feedback, complaints, and re-fires promptly, professionally, and with a solution-oriented approach.
  • Ensure all tables are properly set with correct condiments, cutlery, accompaniments, and presentation standards before and during service.
  • Coordinate closely with the kitchen, grill, and pass teams to ensure timely, accurate, and well-presented food delivery.
  • Supervise and guide food runners within assigned sections to maintain consistency, speed, and service professionalism.
  • Maintain cleanliness, hygiene, and presentation standards on the floor throughout the entire service period.
  • Support professional packaging of leftovers and manage special guest requests with attention to detail.
  • Monitor food service standards continuously and identify opportunities to improve guest satisfaction and operational efficiency.
  • Maintain composure and leadership during peak service periods, ensuring smooth coordination across teams.
  • Uphold brand standards in guest interaction, grooming, communication, and service posture at all times.

Qualifications & Experience

  • Minimum 3 years’ progressive experience in a busy restaurant, steakhouse, grill house, resort, or hotel environment, with at least 1 year in a supervisory or senior service role.
  • Strong working knowledge of meats, grilling methods, doneness standards, and food presentation expectations.
  • Proven ability to lead, direct, and correct junior service staff during live service.
  • Demonstrated experience handling guest complaints and executing professional service recovery.
  • Strong understanding of floor coordination, timing control, and kitchen-to-service communication.
  • Excellent verbal communication skills with confidence in guest-facing engagement.
  • Ability to maintain composure and leadership during high-volume or peak service periods.
  • High standards of grooming, professionalism, and service posture aligned with premium hospitality brands.
  • Strong attention to detail with the ability to identify and resolve service gaps proactively.
  • Physically fit and capable of working extended hospitality shifts, including weekends and public holidays.
  • Experience in beach, tourism-driven, or resort hospitality settings in Mombasa is a strong advantage.
